Drying fish?

Hi Mike:

Sorry for the brief reply before - things were busy.
What kind of fish were you planning on preserving and how long does it have to last? I was thinking in terms of salmon which we smoke up here every way from hard smoking (like jerky - lasts forever) to hot and cold smoking. Salting also works.
The book gives a good background in just about everything you'd need to know about smoking.

We're probably going to dry a salt-water fish such as scaup, which is plentiful in the area. We're not planning on long term storage, but may be refrigerating or freezing to increase shelf life.

I've asked a few others and I think we have a game plan at this time.
