Travelling to Amsterdam, Florence, and Rome 1st week of Jan. Any suggestions on knife finds? Any cutlery districts, or special knives from these areas ?

Near Florence there is a village named Scarperia that is quite famous for the production of some traditional Italian knives. I’m sure you can easily find this kind of knives in Florence too. Take a look in a small cutlery shop in Via De’ Neri, just behind Palazzo Vecchio (Piazza della Signoria).
These are some pictures of the knives you could find:

This is the web site of one of the best knife shop in Rome; it is not far from San Giovanni (Via Gallia, 212).

You could stop by the 'Old Man' near Dam Square to see Hollands largest knife shop. But $$$
Make sure to go up the stairs. On ground level they sell smoking supplies

See if you can find a good deal on a Beltrame.

They are very well made and come in regular and automatic styles.

Mikov is another good European brand and you will probably find a variety of Scandanavian fixed blades.

For a great conventional styled fixed blade Katz makes one.
