Does anybody have any info on the early model kitchen knives ie. when they started, what they were made of and how they were stamped.

I saw recently an older model kitchen knife (butcher knife) with what looks like an etched Scroll Buck stamp along the spine of a kitchen knife(like first production fixed blades, but with scroll letters) with aluminum guard and pommel but had a wooden handle. Any pics would be nice and any info on this knife would be great...

Those are NOT the early model 200 Empress Trio Knives but much later, like 1989 or 1990. They also will not have the walnut display box. DM

DM, I looked in the '89-and '90 catalogs and the knife I was refering to is way older than those. I have no wat of posting a picture just yet but it looks like what an old fixed blade knife with the aluminum squared pommels and hand guard but a chef style blade and the handle material was wood of some sort. The script style etching looks like it may have been lazer etched kind of like the old 110 had when it was a horizontal stamp. This knife had the same type of stamp and in the horizontal fashion but in scrolled letters.

The handle just doesn't seem to go with that blade. Perhaps because I'm used to see something like a 119 on that type of handle but that blade looks cruder than the handle, kind of like a homemade blade was married to a factory handle. The two just don't seem to flow. Maybe a prototype?

It looks similar to this knife made in this mid 50s. Hand made by Al Buck.

The handle looks like Lignum vitae. I think both sets of pictures have the same type of material, HKs and mine.

HK, Yes I thought about those but I wasn't sure about the blade or model #. Ageed the handle does look Buck. DM

From the info I have been able to compile, Both HKs and my pictures are of mid 50s kitchen knives hand made by AL Buck. These were made for locals such as butchers and others that worked in the food indistries. If others know additional information please feel free to join in... In the '57 catalog they have a three knife set that is called THE HOUSEHOLD SET and looks like Hks knife.

Both of those knives are from the 56-61 timeframe for sure. I like that blade mark because it was done by hand with an electric pencil. So that means it was signed by Al Buck! The household set, model 125 contained the knife that HK has. In the catalog it says, "designed to keep the little lady happy " Can you believe that? ;-)
The chef knife was probably made for a local restaurante or butcher shop like you said. I am wondering if the handle is actually rosewood or something other than lignum vitae? I have an ax from that timeframe and the handle looks like the same wood as yours. LV was the advertised handle material but sometimes he used something else.
Nice knives by the way!

Joe,
I can take other pics of the knife, but the wood doesn't look like rose wood. I do believe it is LV the cool thing about the knife is that it has some of the stamping from the previous company on the same side as the BUCK name. It says the letters ON over ED. I'll have to try to research that and try to find out the previous CO name.
