So you edge freaks here finally got the best of me. Im spending too much time sharpening every damn knife in the house two or three times! I started looking for stones and saw heaps on ebay. No idea what Im looking for though. I was thinking a coarse and a medium would be ok for now. I dont use the fine hone on the Loray, just medium and then the strop.

So what should I look for in a stone? Are those 10 dollar stones worth it? Or should I spring for some Japanese water stones?

EDIT: And what grits should I look for?

A no name 10 dollar stone is not going to be that great.

Water stones are a great way to sharpen and can be selective of the knives they will sharpen so buying the right stone is important.

Do you have mainly stainless or carbon steels?

Hi cmurphy -

I bought a set of three diamond-stones from the bay quite a while ago.

They have the "perforated" look on the face - similar to a DMT etc.

They are cheap, and the metal on the face of them will rust slightly I have found, but they do work. The set I bought has a red, blue and yellow stone, meaning coarse, medium and fine.

I used these for some time, but finally broke down and bought an EZ-Lap for coarse shaping, and a DMT duo-fold in fine and extra fine for normal sharpening needs.

I intend to get a larger set of DMT diamond stones - I just think the quality of the DMT stuff is worth the extra money.

best regards -

Thanks all.
I meant to state my preferred steel... I dont have any stainless blades. All high carbon, 1095, 5160 and O1.

What happens with a cheap stone? Do they wear out? Clog up? All of the above?

Their just low quality and are not nearly as effective.

With a selection of carbon steels like that you would be very well taken care of by water stones. If your on a tight budget a king 1k/6k for about 40 dollars will cover most all of your needs. If you can spend in the 150-200 range your options open up a lot.

A little correction, 150-200 if you want a full set and about 100 if you just want a basic set.

1k/6k grits? I'll go for a basic set. And we keep them wet during the entire sharpening process?

Oh and I dont mind the time taken to get a good edge. Im drawn to freehand sharpening for some lame, masochistic reason.

I'd take a look at chefknivestogo, they have a nice sellection of stones and good service. The king would be good but for not much more the arashiyama is worth the look.

For good examples of the abilities of a 1k and 6k stone look up Murray Carter on you tube.

A fine India stone, and maybe a hard Arkansas will do all you need.
There is no need to spend a lot of money.

I bought a full set of king water stones on traditional wood worker.com that came with an 800 1200 6000 and a nagera stone for 104 shipped and I also love free hand sharpening and with a strop I can consistently produce wicked Sharp knives. Hope this helps
