Most of my carry is for day hikes and photo adventurers. Most of the weight that I carry often is photography equipment. I keep a few choice things geared toward emergencies with me.

In the bag?
Change of clothes, first aid kit including tourniquet, food, water, multi tool, screw driver multi tool with allen and star attachments, beater knife, extra ammo and mags for my carry gun, flashlight, batteries, cheap backup watch, compass, small duct tape rolls, paracord, zip ties, poncho, and a bunch of random stuff thrown into the small top accessible pouch like chapstick, sunscreen, whatever.
Off the top of my head thats what I came up with. Might be missing some things. It usually stays in my trunk. Also have a bunch of other shit outside the bag in my trunk. Car tools, jumper cables, crowbar, flares, etc. No point not to be prepared, especially with your vehicle where you can just throw it in and forget it.
