This is the first EDChef to be clothed in the highly lauded AEB-L stainless steel. This customer likes his AEB-L thin and hard, so here we have a hard blade at 63 HRC that is nice and thin, with stock thickness at only 1/16", and ground to a minuscule .005" behind the edge. This knife will slice like nobody's business. I am very fond of the EDChef design. As with all my EDChefs and kitchen cutlery, this one features a radiused spine and finger guard for extreme comfort - especially helpful with such thin stock. The one caveat is that the EDChef design lends itself to more of a friction fit sheath, rather than a snap fit, so if it is to be worn on a belt, vertical tip down is the safe way to do so.
