edge angle

Does anyone now what angle the edge would be on the sjtac ? My sharpmaker doesn't seem to touch anywhere except where the bevel starts.
Seems to be a fairly steep angle.
 
The factory edge is convex and therefore somewhat rounded. The sharpmaker won't touch the entire edge bevel until it's been reprofiled to a "V"-edge. Unless you turn the knife while it's in motion, which seems tricky to me.

It is really hard to say what angle it is unless you measure it with one of them angle compass thingamajiggy. It is ok to change the angle so I say just sharpen away with your Sharpmaker set at 30degress. If you are adamant about keeping the exact angle then just mark your edge with a permanent marker. Then adjust the angle of your knife against the stone and give it couple of test strokes to find the right angle. I hope your hand has good muscle memory and is real steady if you plan on doing it this way. A flat stone will be easier if you want to match the existing angle. Good luck!
 
junior: as mentioned above, it will be difficult to keep the factory edge as it is "convex" and the EP does a "v" edge. I use it all the time and love mine. But you will have to do some work with the coarse stones to establish the new :v: profile and go from there.

No worries. You should hear how I slaughter my student's names on the first day (month :o) of school. I think I have destroyed some esteems for life. :p
 
hehe... I have been on the receiving end of those teachers a few times ;)
 
Regarding edge angle: I have had no issues putting "V" edges on my small to mid sized knives. I think it will make more of a difference on the bigger choppers but even then I haven't had problems when I did the same to my big boys. ;) But I hear "convex" is the way to go for the big guys.

What I do with a Sharpmaker is take one of the rods and raise one end of the platform to adj the angle and then flip the SM with the rod in the same place under the platform.

On the other hand it is my experience that INFI responds 500% better to a strop so I'd keep the convex edge and strop, I think you be better off.
