Edge Grinds?

In the Custom Knife Shoppe thread, discussing BuckCote, Pete mentioned
...because you're edging one side, instead of equal amounts from both sides, it makes it a little easier to hone down the steel...
Am I correct in interpreting this to mean the edge is beveled on one side only (like the unserrated tip of a Spyderco Police, for example)? Is this true for all Custom Knife Shoppe blades or just those with BuckCote? TIA.
