I have a Fallkniven U2 that had a very dull edge. I tried stropping with sandpaper and a strop to form the convex edge. After about an hour there was a nice convex, but the edge was not very sharp. I went up to 2000 grit. I am sure that I wasn't hitting the edge, but more the back bevel. I decided to get the Edgepro out and put a 25 degree microbevel on it. It is wicked sharp but will it hold up? Should I leave it or try to continue convexing hoping it gets sharp?

If it is sharp now, you have won. In all honesty, IMO, that is probably the best edge any knife can have. As long as the micro stays micro, it combines the durability of convex with the precision of the EdgePro. Well done.

Convex edges are certainly not guaranteed to get sharp. There are things that can go wrong. You don't give enough detail about your methods for me to tell what might not be right. First, it helps to match your substrate to the downforce applied. If it took an hour to get your bevel, the paper was probably too fine. If you use a magic marker, you will be better able to see what you are doing, which can help a lot. As you know, if you aren't hitting the edge, it's not going to do much good. :D
