I had the same problem using stones and hand sharpening. I now have one of the Chinese sharpeners off ebay. It is similar but not the same as the Edge Pro. The amount of sharpening I do would never justify the cost of the American edge Pro. I have added some extra stones up to 6000 grit and can get a beautiful razor sharp edge on my folders, fixed blades and kitchen knives. I maintain the edge by stropping with green compound, doing this means I only need to sharpen maybe once every 6 months or less. I have seen a video put out by Edge Pro comparing their system with a Chinese copy, the video was complete rubbish. The Chinese system I use (Ruixin Pro) is not loose and sloppy, it works extremely well. The cost for me was about $30 compared to near $300. If I had spent $300 on a system my wife would have me sleeping in the dog house. The Ruixin Pro has more plastic so would not be recommended for a professional sharpener, but for me is OK. I think the mindset is similar to Chinese knives, I have some Kizer knives I would class as better quality than many of the well known American production knives. Could I get a better edge on the American Edge Pro? I don't think so. If you are prepared to spend a lot of money around $300 The American Edge Pro is good but I think the Russian TSprof is better and I believe comparable price. In the final analysis I think they will all do a good job it is about how much sharpening you propose to do, it is horses for courses. If you are going to drive at 40kph round town you don't buy a ferrari.
