How well does an Edge-Pro deal with a blade that has an upswept tip? It seems like the angle would need to change for the tip?

Depends on your dexterity. When you use the edgepro on long blades you're moving the part of the blade you're currently sharpening over the table part of the edgepro as you go. Theoretically, if you've got the dexterity, it should work fine. Outside curves would be a heck of a lot easier than inside ones. (But that's when I use my SM)

You need to do a few extra steps to get this right.
Treat the tip as a separate blade. In other words, use a sharpie to establish the angle adjustment needed for the tip and input this 'new angle' to the EP and sharpen the tip at this new angle.

This works very well and keeps the edge even from tip to hilt.
