Are these stones the way to go?
Or what's included?
If the Chosara stones work better, I might as well by the sharpener without the stones and buy the chosara set instead.
What are your thoughts?

Stones will crack when you don't care for them properly. They are much like a living thing and if neglected can have serious problems. Typically stones crack from improper wetting and drying practices, its something that is not always easy to get the hang of.

The chosera stones are very nice, you will be happy you upgraded.

So what are the correct ways to wet and dry them? I assumed soaking them for 10 minutes or so then just letting them air dry would suffice. Shapton glass stones are looking better and better.

The choseras sold at CKTG are prone to cracking. Id buy the thicker ones from Ken.

I would just buy the EPA1 or EPP1 , it will save money that you can put towards aftermarket stones. Which will certaintly be an upgrade over the EP stuff. Especially those polish tapes.

The only chosera stone I have ever soaked is the 400 and that was for maybe 10 minutes. They are not designed to be soaked and IMO any periods of even short term soaking can cause cracking to occur. Keep out of sunlight and cold or any temperature extremes. After use dry well and store on a rack or tilted against a wall. Lack of air flow around the stone can trap water causing a improper dry of the stone. In some cases such as with natural stones the stone can even be wrapped in a damp towel to slow the drying to prevent cracking in natural stones.

It's a lot of little things that often get overlooked then blamed on the stone as being "defective". Like I said, it not always easy to understand and in most cases you learn the hard way. Shaptons are good too, nothing wrong with going with those instead.

I recently got a Edge pro apex and was contemplating which stones to get. After a lot of research, I went with the Shapton Glass stones and LOVE them so far. I havent heard a single bad thing about them. Chefknivestogo has a forum and a specific Edge pro section. Check it out.

The stock Edge Pro stones seem to work pretty good for me. Never seen the need to pay so much more for anything else.
