I got my Apex yesterday and after practicing on a couple of other knives, I decided to do my Sebenza. Set the back bevel angle at the 18 degree mark and the primary bevel at the 21 degree mark. Once that was done, I used the 3000 grit polishing tape and polished up both bevels. All I have to say is, wow . I thought it was sharp when I maintained it on my Sharpmaker, but this is something else. The entire length of the blade is mirror polished and scary sharp. Before this, I could never get the curved portion towards the tip of the blade sharp, but the Apex was able to do that easily.

If you haven't gotten an Apex yet, do yourself a favor and get one; it's well worth it, IMO, and it will put an amazing edge on your knives.

The Apex is great, isn't it?

Yep, I've had the Pro version for years and have become the unofficial neighborhood kitchen knife sharpener. People see me out mowing my lawn and find a reason to come by and be neighborly...and it always seems they just happen to have two or three dull knives with them. ;-)

No problem though, I leave the EdgePro permanently out on my workbench and it makes quick work of any sharpening chore. I don't take the time to put a mirror finish on freebie sharpening jobs but no one has ever complained about a kitchen knife that'll slice a newspaper right in half with no sign of tearing.

With the Pro, you can go from a disaster to that level in less than five minutes.

An amazing piece of hardware.

Yes I got the edge scary sharp the first time I sharpened my Sebenza on my edgepro and used the polishing tapes. Afterwards I stropped the edge and it was incredibly sharp.

I'll chime in here too. I also have the Apex and as others have said, it's capable of producing scary sharp edges. Highly recommended.
