I got my Apex yesterday and after practicing on a couple of other knives, I decided to do my Sebenza. Set the back bevel angle at the 18 degree mark and the primary bevel at the 21 degree mark. Once that was done, I used the 3000 grit polishing tape and polished up both bevels. All I have to say is, wow
. I thought it was sharp when I maintained it on my Sharpmaker, but this is something else. The entire length of the blade is mirror polished and scary sharp. Before this, I could never get the curved portion towards the tip of the blade sharp, but the Apex was able to do that easily.
If you haven't gotten an Apex yet, do yourself a favor and get one; it's well worth it, IMO, and it will put an amazing edge on your knives.
