Edge Pro Apex vs. Edge Pro Professional

Being a newbie in the forum I have read with childlike enthusiasm all of the very informative posts that have appeared on the forum over the past couple of months. One topic that has been discussed many times on the forum has been sharpening tools and this is the reason for this thread. I would like to purchase a high quality sharpening system that would serve me well throughout my retirement years. Sometimes I change my choice of what sharpener to purchase a couple of time a day based on the information in the various threads. I have narrowed my choices down to either the Edge Pro Apex or the Edge Pro Professional. Although the difference in cost is significant I would spend the additional money on the professional model if it seemed to make more sense and I felt I would be more pleased with that model. It seems that both units have pros and cons that are discussed and leave me pulling my hair out in making a decision. Even the Edge Pro WEB site leaves me confused. Any advice you can provide me to help in the decision will be greatly appreciated.

Hi Randy... and welcome.

I just posted a bit about this, so I requoted it below. I have and use both.

In a nutshell, both units operate the same. The 2 major differences is that the Pro model allows you to do scissors, and the Pro model is a bit larger, more durable, and has a few features that make it easier and faster for large volume work.

The fact that the Pro is more durable, by no means indicates that the Apex is cheap. I have used an Apex extensively, and I have yet to see any wear whatsoever on any of the parts (not counting stones of course).

The stones used by both are the same, the function is the same.

For the home user, I would recommend the Apex. It's smaller size makes it easier to set up and store. There is essentially nothing you can do on the Pro, that you can't do on the Apex (except scissors). I would recommend the Pro, simply if you intend to start a business, or otherwise do a large amount of sharpening.

You could start with an Apex, and switch to the Pro model, they both work basically the same. But, there are other advantages to the Pro model besides the scissors attachment, that I personally would recommend, that if you could somehow manage to get the Pro, for a sharpening business you would be a lot better off. The Pro unit itself is a bit larger, more stable, and you can adjust it a bit for comfort. The stone change method is quicker and easier on the Pro, which in a business, matters because you'll change them a lot. The design of the arm is a bit different so that you can use more of the stone.
 
Same as cbxw34, I'd only add that Pro will let you sharpen at 6º and Apex at 10º as minimum angle.
 
The minimum angle on either one can be overcome simply by elevating the knife above the blade table... for example cutting a small block of wood with a lip on it, or other ways. Depending on the height of the elevation, you can effectively sharpen at 0 deg. if you want.

The Pro will allow you to do not only scissors, but plane blades and chisels as well. The Pro is more robust, has quick change stone feature. The scissors attachement feature makes an excellent clamp for doing serrations.

For knives only it's about the same, the Pro a little more stable.
