When I use the edge pro apex and get a burr with the 220 stone, when I move on to the 320 do I have to sharpen until I get a burr there as well and do I have to sharpen until I get a final burr on the 600 stone?

You Should feel the burr with the 320 stone but unless you have sensitive fingers you probably will not feel the burr at 600. Go to the Edge Pro home page at www.edgeproinc.com and check out the sharpening tips/videos. They really help.

Yes and yes, but only if you want your knife to be sharp and have a consistent 600 grit finish on your bevel.

Feeling a burr is easily practiced, even easier is the addition of a loupe, you may get lucky by visiting a local jewelry store, there are some decent loupes with built in LEDs that you can probably snag for free or a few bucks.

I start building a burr with the coarser grits, but after the 320 I use visual inspection with magnification to make sure I get to the edge, and I try to avoid raising another burr. They can be problematic if you are not careful, it's simpler not to build one in the first place.

My experience causes me to be in complete agreement with the above. Past 320 grit, I do not raise a burr. A decent loupe, or digital microscope will allow you to finish without the need to waste time on burr removal.
