Edge pro - degrees questions

Hello,

I have been thinking about getting Edge pro. A have read some reviews and watched some videos on Youtube. But I dont exactly understand the degrees settings.

1) So, for example how do I set the exact 15degrees on a certain knife? Thats the thing. If I use different knife on that setting (bigger blade, different geometry), it wont be those 15deg, correct?

2) How do you put your knife on the edge pro? In some videos the guys put the knifes on it that the entire blade does not touch the surface (1:24)... This can be impossible with some knifes(Opinels, Rat-1 maybe,etc)..

I like knifes and sharpening them, but after car crash freehand sharpening became imposible :o

Thank you

1- The markings on the edge pro is used as a guideline but will not be exact. I would recommend an angle cube to get more of an accurate reading.

2- I'm not sure if I understand the question. But basically you want to place the knife on the table of the edge pro to where you can be consistent. The most important thing is consistency, making sure you place the blade on the flat surface the same way every time. Different knifes will be placed differently.

I just found this video which explains both questions :D

There are also videos on the edge pro website and the chefknivestogo website. Have fun and welcome to the forum!

If you put a stone in the holder and lay it on top of the blade, 15 degrees exact will be closer to covering up the red dot rather than the pivot sitting just below it. If you use a smartphone app to read angles, keep in mind they're not all the same. I compared a couple based on the EP angle markings. Some dead on, some a degree and a half off.

Ive just ordered Edge pro 4 kit + angle cube, because I found out that my phone isnt exactly precise..

How do you feel about touch ups on Edge pro? I guess due to angle cube I always should have the precise angle so it should not be a problem.

Due to the time to set up the edge pro for each knife I prefer using a Spyderco sharpmaker. Strop also works well between sharpening again.

Touch ups are probably easier on a sharpmaker, just depends on if you don't mind the hassle of setting up your EP for a touchup. Record what angle your edge is at and the angle cube will make it easy.

Well, my hand shakes a bit and I tried SM and it did not work for me. Thats the reason why I wanted Edge pro. Btw. Im just reading that those stones wear out pretty quickly but I cannot find anywhere how long it approximately takes? Plus I also read about a guy who stores his stones 24/7 in water, he says that they last longer.. any experience here? :)

I don't have the Edge Pro, but I keep an Excel file with all of my knives and angles that I use for my Wicked Edge. Makes touch up and setup much easier.

I don't find that the Edge Pro stones wear out quickly. I also have been able to produce excellent edges with them. I have a set of Chosera stones, but don't usually bother with them.

Good sharpening,
Dave

Out of curiosity, why do you choose not to use your chosera set?

this is what I wound up doing as well. I have a lot of knives, and they get a lot of use. No way could I remember all the different settings needed.

Congratulations on your purchases. I think you'll be satisfied with the edge pro and angle cube.

I hated the tapes. They work but took too long to completely remove the previous stones scratch pattern. Some people may have better luck with them than I did, but I could only use them with trailing edge strokes.

I got the chosera stone set and I am COMPLETELY satisfied with them. They cut good and fast and leave a nice even scratch pattern. I've had no problems with cutting super steels to a mirror finish. I also use the drill rod stop collar.

I write down all of the set up info for each knife I sharpen on the edge pro. I take measurements with a caliper.

I also keep a record of my blades and sharpening angles on my Wicked Edge. Makes resharpening very easy.

Sharpening and Reprofiling : Edge Pro (EP stock stones is more than enough to get the best result, IMO)

Touch up : Sharpmaker - Ultra fine stone

They both are great set....
