It's almost time to replace the EP stones. I was thinking of using a different stone either Choresa or Shapton. Help me decided which to choose.
I sharpen knives for a couple people and do some kitchen knives. Some of these get polished edges.

Personally I want to buy a full set of the chosera stones because after much research I found them to be the best fit for me.
I think both are great, but I guess its really personal preference
If you want longivity tho Id say go with the shaptons.(since you sharpen alot) Plus they are splash and go

Shapton glass or shapton pro are great stones. I have no experience with chosera, but heard good things

What level grits would you recommend?

I've got every grit available I think of Chosera stones but my biggest recommendation is a coarse diamond plate in addition.
The coarse stones made a complete mess and wear pretty quickly. The diamond will also save your more expensive stones while reprofiling.

Im pretty sure they only sell Shapton Glass stones for the EP
Depending on how much money you want to spend/your other stones recommended grit levels would be varying
Plus depends how polished/sharp you would want the knives to be. The stones go up to 30k ha
Personally Id say at least do 220-8k( you can skip 320,4k if need be)

Be careful with the grits as they always don't match up. Grit Comparison can be found here. https://jendeindustries.wordpress.com/2010/01/10/which-edge-pro-stones-stock-chosera-or-shapton/ Stones depends on the goals you are shooting for. It depends on the type of edge that you are working with and the edge you are shooting for. How many stones you plan to purchase. It can be subjective, but I would be willing to offer insights. Many times it may be your mileage my vary. Maybe you can provide the group a little more information.

Barman1 is 10000% correct
you need to definitely get yourself an atoma 140 diamond or another EP diamond stone
Itll make your life much easier

Those Shapton glass look nice.
Was thinking maybe keep the EP 120 stone then get the Shapton 500, 1k, 4K and 8k.
What do you think of that?

Honestly if you are buying those shaptons you are much better off spending some extra cash and buying an atoma 140 to go along with them
If I had the money that's exactly what I would do. The ep 140 isn't trash but if you are upgrading the other areas of your kit might as well upgrade the most important stone

The progression would work. You could even go 320, 1k & 2k 4k skipping 8k. Before investing I would do a little more research on grit progression threads. It's all dependent, there is no perfect scenario, and definitely is not one size fits all. I can't speak to the diamond stones on the edgepro. Unfortunately these things can become rabbit holes.

Thanks, your PM helped a lot 👍
