I am looking at getting either an Edge Pro or a Wicked Edge. I am also looking at getting some new Japanese kitchen knives. In doing a lot of reading, I have come to the conclusion that both the EP and the WE are great, and I am probably going to be thrilled with either. But given that I am about to invest some good money into Japanese kitchen knives (that I will be using), I am curious about asymmetrical sharpening. It sounds as if a lot of the Japanese knives are not symmetrical. This interests me as I am a lefty. I HATE having knives that pull towards my right hand.
At this point, I am leaning just a bit towards the EP based on what I perceive to be a slightly safer system, and the fact that additional stones are a lot less expensive as you only need one stone. But the speed with which you can move between stones on the WE is very enticing.
It would seem that WE would have a big advantage over EP for asymmetrical sharpening. Just position one side arm at one angle, the opposite side arm at a separate angle, and there ya go. With the EP, that would seem to be a real pain in the butt.
And in a more general sense, is there a real noticeable difference for a home cooking enthusiast with regards to the asymmetrical sharpening, or am I going to be every bit as happy after re-sharpening my knives symmetrically?
