I'm the guy that was struggling with my Henkle's chefs knife, and you fellas were kind enough to walk me through it, and here's what I've learned:

1. If you need reading glasses, you need to use a Sharpie to help set the original angle.

2. Be patient. The video you watched took 2 1/2 minutes. This could take a lot longer than that.

3. My ZT 350 (recurve) I tried after some level of confidence won't go with the stock stones. I'm going to need the skinny ones.

4. Be brave and go for it. Next came my daily carry, and my current crown jewel, my Spyderco Techno. Thick, short, and very hard. But after just a few minutes, she's sharper than it's ever been. It's not perfect yet. The body is there, the tip isn't quite there, but I'll get there next time.

A quick strop on the top of my denim covered thigh, and for now, I'm good to go.

I know I have some refinements to make, but following the good advice here, I'll get there.

An other trick that helped me. Hold the knife with the apex of the edge facing your eye, like you are going to cut you head in two. (Sorry for the gruesome thought!) Get under a really, really bright light and look closely. Dull parts will show up as reflection when holding the knife as above. While trying to NOT cut your head in half for real!
