I got my edge pro in yesterday I love it already. I put a mirror finish on a SOG flash II also my kitchen knives slice effortlessly through tomatoes. If you are just planning on using the 220 and 320 grit stones how long does it take you to sharpen a pocket knife or a 9-12 inch chef knife on average. What if the knife is beyond dull its blunt?
 
It really depend on the steel. If it's something like ZDP 189 or S90V, it will take you a LONG time. If it's AUS8 or 420HC, then it will take much less time. The 120 grit stone really can help cut time when reprofiling or fixing bad damage.

It takes me about 20 minutes to do a large kitchen knife. Keep in mind that there is no reason to let it get that dull in the first place. If you are just a 'family cook' rather than one who is in the kitchen all day every day, you should only need to put your knife to the EdgePro 2-3 times a year. The rest of the time it should be maintenance with something like the Spyerco SharpMaster, or other crock sticks once a week, and daily 'steeling.'

The EdgePro is great, but it's not the only tool needed. Trying to use one sharpener for everything is like trying to use a hammer as the only tool in your box. Yes, you 'can' make it work, but it won't do the best job.

Another factor to consider is that as your experience level increases, your speed will increase correspondingly.:thumbup:
