While a polished wicked edge certainly looks very nice, does it actually cut any better,
than a sharp slightly toothy edge for moderate daily use with say, S90V or S30V steel ?
Depends, if you're mostly push cutting, then a polished edge cuts better. Take woodworking tools like chisels and carving tools, polished edge works better.
If you are draw cutting or slicing, then a slightly toothy edge will catch better.
If you're talking about EDC, I usually like a 600 grit edge for general purposes.
It depends on the material you are cutting. A toothy edge works alot better for a hunting knife to cut soft skin and meat. A highly polished edge works better for cutting tough fibrous things like wood.
