Ok John said all his blade grinds are convex, ok easy to understand. He then told me I could get the edge V shaped or convex. As I understand you can resharpen the knife with the V shaped edge on a standard stone, but its a little more tricky to sharpen the convex edge. So my question is, will the convex edge have any real advantages over the V edge? :confused:
 
Ok thanks Mr. Sogetsu. One more question. With a V edge on a convex grind, will I run into problems resharpening it?
 
You shouldn't run into any problems, but I suppose that depends on your sharpening method. Since most V-edge sharpening methods involve removing steel from the entire edge, the nature of the grind behind the edge shouldn't really matter. Also, note that freehand stone sharpening and stropping will naturally produce a convex edge over time, even if the original edge grind is a V.
