Looking for which steel will get sharper and hold the edge longest between VG-10 and SR-101. Thanks

It will depend on your sharpening skill, what you are cutting and the general use of the knives in question.

general bushcraft. there around 4 to 5 inch blades at 3/16 inch width.

At that thickness it won't matter much...

SR101 will be tougher though.
