Edge Testing = Polished VS Ground ( wet stone grinder )

I sharpened 3 knives in one sitting .. First I started with a polished edge ( 5000 grit )
The first knife to be presented is my old early 80's German made Carbon sheath knife .
Polished edge rolled at 150 slices ..
80 grit grind on the wet stone grinder failed at 300 slices ..

Strop back : Was much easier on the polished edge as it rolled .
The strop back was much harder with the ground edge as it seem to just dull . ( It did strop back with compound ) .

So 150 VS 300 ......... Easy strop back VS more effort to strop back .

This is a 3 knife test , and this is the first test with my old Sheath knife that was carried for 30 years in the field . ( something like that ) .

2 More tests to go . Brother F005 & Terävä Jääkäripuukko 110, Carbon Steel ( A very disappointing knife for me )
 

5000 grit edge , guided knife sharpener , the polished edge !
Returned some 300 slices for a fail with what appears to have been a rolled edge .

80grit grind , off the wet stone grinder .
Returned what looks like a 550 slice fail with a possibly rolled edge .

This knife has been reviewed , tested and was not super impressive .

But that 80grit grind , that does look impressive !
So from average / good performance levels to very good / excellent sort of levels ..

One more knife to go in this short test : Terävä Jääkäripuukko 110 ...

Polished edge ( 5000 grit ) does a 150 ..
80 grit grind does a 250 roller & strops back strong !
It's a win for the 80 grit grind on the wet stone grinder .

One of these days , I will pit each of my grinding wheels against each other .. 60grit / 80grit / 180 or 220grit (?) .
But next up will be the Mora Garberg ... ( The Garberg )
My Garberg had / has a micro FUBAR edge .. ( So there is that ) I think I did a post about it already .
