In a thread I have in the Reviews and Testing forum, Esav Benyamin pointed out that VG-10 steel may have been formulated as a horticultural steel, hence its propensity to taking a finely polished edge.
So, here's my question - in y'all's experience, have you noticed that different steel types take on different edge qualities? If so, what types of edges do the different steels hold best or seem naturally predisposed to?
