I just purchased the edgepro apex, and when using the sharpener I noticed that if you go to far on the forward stroke your knife will hit the safety stop. I saw on Ben's video that when he demonstrates the system he is hitting the edge of the knife frequently. Going from stop to stop on the model will be a good way to ensure full stone usage, but is it bad for the edge to be hitting something?
