My 120 grit stone has seen alot of action and is starting to dish in the middle. How deep can the dish get before stone replacement is needed?

They have a lot of life in them,he sells a glass and sand to even the stone to new, look at his web................

I does need to be lapped flat though as noted. Otherwise it starts to form a convex edge when you use it.

You can use up a DMT extra-course whetstone, a flat piece of concrete, or get the silicon carbide or the stone leveling kit directly from Ben/EP.

You shouldn't let it dish at all. Flatten them after every couple of knives. It only takes a few minutes, you can do it on a cheap new Silicon Carbide stone ($3-$5 in any hardware store) or if you happen to live where there is a nice smooth cement paving stone, use that. Just put a strip down the center, end to end, with a marker, rub your EdgePro stone back and forth until there is no more marker showing, and you're done. Five minutes at most.
