I am about ready to spring for one. (the level 3) Have done a ton of research and the verdict is it will be the last system you will need to buy. There is a learning curve on its use(reccommend cheap knives at first), but then it is suppose to be the bee's knees!!!! Ain't cheap, but I have a drawer full of sharpeners that just don't cut it!!(hehe).

JMHO.....and future purchase...........

I would go with the 3. Same sharpener, more stones. I've been using the Apex for the last 8 years, it really is phenomenal. You will not regret it. You will also set a new standard in sharpness in no time at all.
 
As I've posted before, it is the single best knife-related investment I have ever made. And as an investment, the more you put into it, the better the return. Get ALL the stones. Get a couple of the 120 grit (which seem to be the only one that shows wear.) If you want to protect the finish of your knives also get some blue masking tape. (I generally don't bother with it.)

The EdgePro Apex will sharpen every blade you have, and do so at what ever angle you prefer, and result in a better edge than any other hand powered knife sharpener.

I agree get one or two extra 120 stones. If you're like me, you'll start out removing a fair amount of steel from a lot of your knives. After a dozen or so knives, the 120 stone will be a lot thinner, and that makes it so the angle of the other stones won't exactly match the 120. Also, keep those stones flat. The 120 begins to dish pretty quickly.

Start out on cheap knives!!!! Also remember, you can always start out with a larger angle, and later change it to a smaller angle. But if you go straght to 10 degrees, there's no way to put that steel back on the blade. ;)
