Hi,

I'm thinking pretty seriously about picking up an EdgePro Apex, due to my lack of success in "repairing" or "improving" edges with my Sharpmaker. I've been doing some research on it this morning, and have a few questions.

1) The first knife I want to sharpen is my 940. I tried thinning out the edge on the Sharpmaker (the 940 appears to have about a 25 degree per side edge). However, I am concerned that there is not enough flat space on the blade to effectively use the EdgePro. Can the EdgePro handle knives like this?

2) Is there any sort of indicator that shows the angle being used? I would like to double-bevel my using knives, with a narrow back-bevel and a wider edge bevel.

3) How well does the EdgePro handle tip sharpening? This is one area that I have never been able to do well with the Sharpmaker.

Thanks for the help. I am hoping to find that system that works well for me, so that I will feel less inhibited in really using my knives!

I had an Edge Pro, and it will sharpen a 940 easily. You can rest the knife on its flat ground bevel easily. Just lift the angle a couple degrees to accomodate for the change, it teaches you how to do it in the manual that comes with the sharpener. The only thing you have to watch out for is not going at too low of an angle. If you go too much below 20-degrees, it might start to scrape the thumbstud with the sharpening stroke, simply because the knife has large thumbstuds and a very narrow blade.

Of all the sharpening systems, the Edge Pro does tips the best because it has the wide 1" stones. I would practice on a kitchen knife first, to get used to the sharpener, it does take a little practice holding the knife steady, since there isn't an actual clamp. I foolishly sold my Edge Pro last year and I'm about 100% sure that I'm going to get another one.,

Thanks Chang. I guess I'll need to get a Torx set if I want to sharpen the 940 at an angle steeper than 20 degrees!

How about the video? Is this a nice-to-have, or a must-have for using this system?
