EdgePro vs. Sharpmaker

Which one would you chose? Cost is no object. Most of the blades sharpened would be between 7-10 inches. Their may be the occasional recurve but not many. I would like a system that would allow both hair popping sharpness and a sturdy yet very sharp edge on a heavy chopper. Thanks for the help.

I think you might also need to consider whether or not you plan to mainly just sharpen your knives occasionally or you will engage in a fair bit of reprofiling.
 
Mainly touch ups as I sharpen my knives habitually. Also please explain your choice. Thanks.
 
I don't yet have an Edgepro, hopefully soon, but I do have a Sharpmaker so I can only give an opinion on that. From what I've seen of, and read about, the Edgepro it would be good for reprofiling as well as touch ups but it is more expensive than the Sharpmaker. This might not be a consideration for you.

The Sharpmaker is an excellent sharpener, easy to use and extremely versatile but it has a couple of limitations. It is limited to two sharpening angles, (30 & 40), and, unless you get the diamond rods, (expensive), or wrap sandpaper or the like around the other rods, reprofiling would be a long and arduous process especially on the harder steels.
 
If money were truly not an issue, I'd (as I did) purchase the Edge Pro and the Sharpmaker. I find that the Edge Pro is very efficient at reprofiling to the angle you want and then touch ups with the Sharpmaker, assuming that you reprofile to either 30 degrees or 40 degrees. Don't forget a strop. There is an excellent thread running right now discussing the wizardry you can accomplish with a strop. Something about being a sharpening Kung Fu Master...its excellent
 
If you add up the Sharpmaker plus diamond rod and fine rod upgrades, you might be near the EdgePro in cost. Second, if you have the space available to keep the EdgePro assembled and ready to use all the time, then it might be the better choice. With it, you have many angles to choose from, can use it for touch-ups and also can use it for putting primary bevels on knives quickly and easily. EdgePro does require that you periodically flatten the stones, which is not hard to do. (they will dish out after using them for a while). Lots of people on the forum have both systems, having gotten one or the other first. They will use EdgePro for the hard stuff and use the Sharpmaker for maintenance.
