So, this Swiss knife maker makes these elastic ceramic kitchen knives. They have the hardness of ceramic, but aren't nearly as brittle as regular ceramic knives. Maybe you're familiar with Cedric and Ada's knife test,

And if you're not, this blade material lasted longer than any other material by far. Over twice as long as the highest performing blade steels.

Anyways he recently released a serrated elastic ceramic knife. I've always wanted one of his knives, and now I'll want two. What's your guys thought. Would you ever get something like this? Also, they are extremely light, roughly 50 (serrated) - 80 grams! (chefs knife)https://en.rahven.store/

I have 3 of these in different sizes. They are light. They come sharp, but I’d like them to be sharper out of the box. They are much tougher than regular ceramic knives. I haven’t seen any chipping in my use. The problem is that I haven’t been able to sharpen one so far. I’ve tried different diamond stones and so far no luck. I freehand sharpen so maybe using a sharpening system would be more successful, but I don’t have one. I think if they came sharper out of the box they would work great for people that don’t sharpen and want a sharp knife that stays sharp for a very long time. These seem like the sharpness would last a very long time. They are not bad out of the box, but should be better. Mine are plain edge and I bought them as soon as they became available.

Thanks for your input, cool to see someone who actually has a couple. Yeah, it's funny. I saw the creator comment on Cedric and Ada's video that he would make a Sharpening tutorial. He never did. Although he did explain how to do it, very lazily.

I think the material has great potential and the knives themselves could be a replacement for other kitchen knives for many people. They just need to come very sharp from the manufacturer. They are sharp, just not as sharp as they should be. For example, out of the 3 of mine one was excellent, cuts tomatoes well cuts hanging paper towel. The other 2 cut tomato, but not like my steel knives, don't cut paper towel. Now, I might be asking too much at this price range, but the rub is that these are basically impossible to sharpen for a normal person. I am an enthusiast, so I'll figure it out eventually. I also recommended these to my friend, he also bought 3, and his are duller than mine, don't cut tomatoes without squashing them. This is not ok. I still believe in the material and envision that it can basically replace normal, store bought kitchen knives for many people. I bought these to test, so I can give them to my parents and to never have to worry about sharpening them. This goal might be achievable if the knives come sharper from the factory. Cutting tomatoes well has to be the threshold. The sharpness on my friend's knives is unacceptable for kitchen knives.

I don't think Roman created these, my understanding was he helped and consulted on heat treating and working with the material. I could be wrong. He was very helpful when I asked him how to sharpen these and he was successful in sharpening these himself. I don't have his skills though, I will also figure this out, I just don't think most users can be expected to be able to sharpen these. I am mostly disappointed with the sharpness of the knives my friend received, mine were ok. Maybe his are a fluke and they come perfectly sharp now. The durability of this material is good for my use, it is head and shoulders above any other ceramic knives I've tried.
