Electric Sharpeners

Ralph Mroz praises the the EdgeCraft Chef's Choice electric sharpener in the current issue of Tactical Knives. Quote "..is so effective you'll be looking everywhere for knives to feed it."

I've seen mixed reviews of pull through electric sharpeners here in the Forum in the past.

Anybody have some recent experience with Chef's Choice? What have you successfully/unsuccessfully sharpened besides kitchen knives?
 
The only one I like is the 120. I think it's able to put a finer edge on the blade than any of the other models.

Works well on kitchen knives but doesn't have the right angle for sporting knives. Also does not do well on some of the harder steels (ie. ATS 34, 55 and CPM 440V). I tried it on my AFCK and it didn't do wonders for my edge. It may be ok for just taking the shoulder off the edge but thats about it when it comes to sporting knives.

That was my experience with the 120.
 
I have had a Chef's Choice Diamond sharpener for at least 10 years. It is still going strong. I have not tried any high carbon blades in it, it is designed for your standard stainless kitchen knives. It does a great job. You can get them shaving sharp. Not hair popping sharp, but since my wife needed eight stitches in her pinky after cutting the bone out of a ham, I don't need to make them any sharper for her. It is a great gadget to play with on your kitchen knives and does a decent job.
 
I recently tried the model 300 (similar to the 100, 110 and 310). It doesn't have the stropping phase, just the orbital flat diamond hones. I tried it on a (beater) boning knife with a hollow grind. The angle-guide was unable to accomodate the hollow-grind with any accuracy. It probably would have worked a little better on a flat-ground knife. However, after working for a while on that one knife, I was thoroughly underwhelmed by it's usefulness and I promptly returned it and went back to using my Sharpmaker 204 exclusively. That knife now has a trashed edge and profile. I wouldn't recommend it.

I have never seen a negative review in any of the print magazines, and I would suspect that Edgecraft has signed up to run a few nice ads in exchange.

Electric Sharpeners are one of the best ways known to destroy your favorite sporting knife. Do not go there.
