I recently acquired a Busse Steak knife. I was wondering what the Hogs think about the Busse Elmax. I have a number of Elmax knives from other manufactures and have been pleased with the steel. But recently I've been using the Busse Elmax steak knife. And I can tell you from using and sharpening the Busse Elmax that it is a different animal. It has greater wear resistance than the other Elmax knives I've been using. The heat treat must make it harder then the others. I wouldn't say that I've been beating the heck out of the little thing, but it sure seems to be a tough little sucker.
Also, being a fan of the little Busse Elmax knives, does that make me a hog or just a piglet?

There have been a lot of good reports on the Busse Elmax blades. Jerry seems to have a knack for getting better performance out of a given steel than other knifemakers.

The Elmax surprised all of us here at the shop. With the Busse treatment it has proven to be a very resilient steel, I've been more than pleased with my little Elmax Active Duty.

Tough stuff

I am a bit confused by the intro of elmax by the busse knife family. I buy these knives for their reputations. Infi and sr101 speak for themselves. Why introduce elmax unless it is better?

It doesn't have to be better to be useful. In knives such as the Steak knives the properties of a stainless out weigh the raw toughness of SR101 and INFI. Having used a bunch of knives in Elmax the only maker I can say does it better is Phil Wilson and that's darn good company to be in imo.
