Emerson Blades

I have a couple of Emersons and I was curious as to why they only sharpen one side of the blade on the knives? Anyone know?

in fact, most emersons are ground on both sides. though ernies version of a "v" grind is somewhat like you say. they have a saber grind toward the edge, then the primary bevel is on one side.

if you are referring to models like the 7 which are a true chisel grind, ernie just prefers that grind and finds it more durable.
