Engraving damascus steel?

Hello all,

My father is turning 50 this year and also opening restaurant. I have decided to buy a nice chef's knife and have it engraved. It probably won't be used a lot--more likely something special that will be displayed.

There are a few knives that I've been considering, but is it generally okay to engrave damascus steel? I have been looking at Shun Hiro and Shun Fuji knives because williams-sonoma has them on sale right now. Something like this:

These types of knives indicate that there is an inner "Core" (one I was looking at is VG10) and then alternating layers of other steels. I am worried that if it is engraved (with a diamond, instead of a laser, for instance) it may get into the core and rust could develop.

Am I understanding this correctly?

Any advice on a nice 200-300 chef knife?
