Wanting to do a kit knife. I live in a moist environment (the pacific northwest). Which would be the appropriate steel choice of the three for my conditions? d2, s30v, or 01?
 
S30V would definitely be my first choice since it is a stainless steel and resists rust.

D2 is sometimes called semi-stainless so it would be my second choice.

As for O-1, It's been my experience that it rusts easily if not kept dry and oiled so it would not be a great choice for a wet environment.
 
s30v, but if you take care of the knife well then D2 could potentially patina but I doubt it will rust, and O1 will work just fine as long as you expect it to patina/rust a bit faster.
 
I have a the Trapper in both O1 and D2

The O1 patinas or rusts if you even look at it sideways, I need to keep it oiled all the time.
I store it in the sheath wrapped in newpaper, if not it rusts from the sheath

The D2 eventually patinas to a grey
Functionally it is a stainless when it comes to rust
I like it on the Trapper as it is harder thatn the O1 and holds an edge much better
D2 is one of my favorite steels and I have it many Queen slipjoints and never have a rust problem

I have only used S30V in a Syderco Native, it is an amazing steel, and could see it being excellent for a zero scandi grind
How strong an edge will it hold?
 
I spoke to the guy who runs A Wright & Sons in Sheffield and he said people are only after O1 tool steel because Ray Mears said it was good on one of his episodes and now everyone's after it. I'm going for the S30v trapper kit for Christmas. It looks like you get a better handle choice if you go for S30v

Also there's a video on YouTube of some guy building an O1 tool steel trapper and he says you can see the rust after about 5 minutes of air exposure!
