EPA->Moving to the next stone

I have a EdgeProApex4 and while I've done some sharpening, maybe 35 knives, I still think my technique can improve. First question I have that comes to mind is, when do I move off from one stone to another. Say I'm using the 400 and I want a sign to move to the 600, and then the 1000. Up to this point, I've been doing about 40 passes, both sides, and then moving up a stone. I also think I could stand to slow down. I do 20 passes before flipping over. I think NutNFancy does 5!

How to tell? Watch the scratch pattern, that's why less strokes before inspecting the bevel is important. Grind a little, inspect, grind a little, inspect..... And so on. Once you notice all the 400 grit scratches replaced by 600 grit scratches you are getting close. Once the scratch pattern has made the conversion its time to focus on the edge apex where the bevel slopes meet. Note: make sure the bevel has reached a apex prior to moving on from the first stone or following stones will have little effect.

Each stone should leave a sharper and sharper edge, remember to use light pressure in the end too, its how you remove the burr.
