Ergo Santoku with Carbon Fiber

Here is one I finished up yesterday for a good local customer. This Ergo Santoku has carbon fiber handle with red liners, slight palm swell, two small corby bolts and a mosaic pin. Blade is 1/8" thick CPM S30V, with a 6-1/2" edge and 11-3/8" overall, flat grind to the back edge. Paul Bos heat treat to +/-59 RC. Scary sharp thin edge that almost got me, left my finger with a flap of skin, did not even realize it happened at the time.
