Esee 1095 - which DMT diamond plates?

Apologies if this has been explored elsewhere. I'm looking at the DMT plates that come in either Corse/Fine (325/600) or Fine/Extra Fine (600/1100). My question is this: will the 1095cv that Esee uses benefit from the Extra Fine diamond plate? Can it get sharp enough for that to matter with a 20ish degree edge? Or would I be better off having the Corse on hand just in case I get a chip. My usage philosophy is 'right tool for the right job' and all that, and consequently I have never chipped a knife blade but do tend to touch up frequently. In case it matters, I'm sharpening an Esee Laser Strike. Thanks in advance!
 
I have several Essee knives and I think diamonds are overkill. Essee 1095 can take an incredibly fine edge with conventional stones. It's kind of up to you but a good sharpening to about 1200 grit and then stropping gives me a super sharp edge.

Do you think that the 600 Fine stone would work to clean up any small chips/nicks that would make their way in through batoning? Would have to work harder than a course stone, but I'm not too worried about the time, just the capability.
 
Depends how big the chips are, but I would generally recommend the course for edge repair.
 
If you are so inclined, a King K80 water stone makes that 1095 pop.

The course side repairs, the fine side polishes.

But it is not for fieldwork.

I carry a Diafold Course/Fine for that.
