So far... it's been 20 degrees a side, 40 inclusive, for all. Being 1095, it's very simple to change that. I keep mine mostly around 15 a side.
 
Yes, they are about 20 degrees per side. I prefer most of mine at 15 a side. Dizwolf, what sharpening devices do you use to regrind/bevel and sharpen your ESEE's? Thanks

I usually knock off the powdercoat on the shoulders with a set of lansky diamond plates, and finish up with a sharpmaker. I used the sharpmaker solo once with gray stones to get through the coating. It took a long time.
