I want to start marking my knives. Do you folks recommend the Etch-O-Matic tool?

There are faster tools for the job. They don't do much more - just faster. They cost double and up. The etch-o-matic is a good starting point at a great price point.

You can also find plans to build your own if you are so inclined.
