Nice pics Moose! My mom used to put garlic cloves in the meat the same way. Brings back memories. Thanks for sharing,,

I had some shitty, left over pizza for dinner........

man ya just gotta love a slab of meat cooking over an open fire!! reminds my of my honey moon lmao!

That brisket looks too freaking good. Man, I'm really hungry now.

Hey Everybody.....

Obviously had a great time at PWYP.......The guy in the last pic is Very Special Dave my co chef at PWYP.....We both missed Average Iowa Guy in the kichen.....Dave is responsible for the brisket prep.......Jim Nowka and I built the spit......Jim harvested and peeled and pointed the pole with a so-so blade he made and I finished it off with a BK16 and then drilled the skewer holes with a Vic SAK awl, and crafted the skewers with the 16......BTW IT is important to put witness marks for the hole locations outboard of the roast....Briket pred involved lots of bacon used as larding, many whole garlic cloves inserted in slits in the meat, Black pepper, galic paste, salt etc.....The crust was incredible and the inside meat was a whole lot better than OK.......Having Dave around camp is great for me as I do not feel that I gotta cook out of self defense.....LOL.......Dave has mastered the outdoor culinary arts in a big way but, he has trouble building a fire without copious quantities of C4..........And this despite many government sponsored wilderness outings stretching over decades......

Thursday was difficult in the rain but, I certainly have had other good times in lots worse......The rest of the weekend was beautiful........The company at PWYP is outstanding.....Close to sixty people not counting kids and dogs....Our fire ring had three excellent canine companions......Two German short hair pointers and a mostly German Shepard all of fine temperaments........Even the presence of two Former denizens of the Corps and an equal number of former graduates of the John Wayne School for Wayward Boys at McCall did not disturb the peace or the slinging of copious quantities of amusing, and occaisionally informative BS.....Knives and their constituent parts were discussed at length, the world's difficulties were solved(details if, I can remember them will follow) and those absent had their shortcomings enumerated in considerable detail.........Scatty are your ears a burnin?........We missed ya.....

The chopping contest was won by the Ka-Bar Zombie cleaver, alas, alas......

All best.......

Ethan

Wow, that looks so dang tasty. Man, I'm drooling over here.

Sounds like you had a great time Mr. E! I really enjoyed reading your post and lookin at the pictures, thanks for sharing!

PWYP 2013 was a lot of fun. It was my and my wifes first time attending and we had an absolute blast. I was nearly overwhelmed by the amount of knowledge that everyone was more than happy to share. I can also vouch for how amazing the prime rib came out as well as the Chili and the Palenta (or Placenta as some around the fire called it) came out the following evening...

I still want to know what the heck I was doing in that photo of me above... It looks like I was drunk and in the process of falling out of my chair... or maybe showing off my super awesome boot socks... Maybe next months contest will be coming up with the best explanation. :D

Cool pics, and looks like some tasty food.

That Zomstro just looks like it would be a fun chopper in my woods bag. The Swabbie looks cool as well. Both 1/4" thick, be a heck of a hoss.

Sounds like an awesome gathering. Well, actually, it HAD to be, if bacon, brisket & bs were involved ! LOL :D
