Is there any web site that lists and has pictures of every Hubertus model?

Not sure whether such an animal exists, but here is a page with a few pics. If you're looking for info on vintage Hubertus knives, try www.messerforum.net (German knife discussion board) - you can post any questions in English, I guess that someone over there is able to help you.

Not every model is displayed here www.toolshop.de but a lot of them (I think).

I've got another browser opened to www.knifeshop.com and it list 4 pages of Hubertus models, can't imagine they make more than this site shows!

Hubertus makes some great tradtional German cutlery. I use to buy many of their nicker knives when I lived in germany in the late 80's, early 90's.
