So my knife obsession is evolving.

I took some knives to a different sharpening shop today, my old guy does a decent job but I have been wanting my knives sharper so I tried a new guy. I got the knives back and they are less sharp then when I dropped it off FML. I recently picked up a Edge pro ceramic hone. so I went home and worked on my Kershaw leek s30v.


When I started I could drag it down my arm with out catching hair. After a few passes on the hone I had it popping some hairs. I worked on it and got it pretty sharp "shaved most the hair off my left arm". I figured I could get it sharper still and kept honing tell my knife feels much the same as a butter knife.

I am guessing that the Knife sharpener guy did not bother to remove the burr, and after I honed the burr off I got it sharp and then I somehow screwed it up.

Hone questions:

1: hone maintenance?
2:Pressure and angle?
3: can a hone get wore out and how do you tell?

I have also decided to start doing the sharpening myself. I have been looking at all the different systems and I really like the paper wheel systems.

paper wheel questions.

1: what type edge does a paper wheel make guessing convex?
2:What RPM range does the bench grinder need to be?
3: are all paper wheel made equal. guessing not so what are the best brands to buy
 
Can't answer you about the ceramic hone, but I can hopefully answer the paper wheel questions.
1: You can touch up a convex blade, but it makes them a v-edge.
2: richard J. recommends 1725 rpm, but you can use pretty much anything as long as it has 1/2 hp or more.
