Finally I received now my sharpening supplies after just 11 weeks (!!!) of shipping time from the U.S. down here to Mexico! So let´s start learning free hand sharpening...!

While I already got the grasp on raising a burr I am definitely struggling how to hold / handle the knife (at this moment mostly kitchen / chef knives) to sharpen both sides evenly. Yes, I already learned that there is a lot of time, exercise and muscle memory involved, but what I am looking for at this moment is a good starting point.

I am right handed and sharpening the right side edge (when I hold the knife in my right hand and that way the edge points to me when sharpening) already works not that bad. But sharpening the left side edge I simply do not find a stable and repeatable position how to hold and handle the knife on the stone. I also tried to hold the knife with my left hand but that is the most unstable and weird feeling position at all.

Can anybody recommend some good explanatory videos so that I can have a look how others are doing it and hopefully find a way that also works for me?

Es mas importante debes practicar. Practicar. Practicar. Afilo mis cuchillos quizas tres horas cada semana. Pero, haciendo cuchillos, entonces tengo muy oportunidades.

I freehand by moving the blade with the edge going away from the center of my body to the right and then the left. That way I can see how far the spine of the blade is from the stone surface.
I have seen many people sharpening blades by moving the blade away and then toward them but I never got the hang of doing it that way.

All,

Thank you very much for your hints and recommendations.

I searched for videos on YouTube and looked quite a lot of them. Some are better, some are not that good. The Korin series of videos regarding sharpening I personally liked, at least for me they explained a few topics nicely.

Yes, I also have angle guides, but personally I do not really find them overly helpful as the real key for me is developing the necessary muscle memory to get consistent sharpening angles and results.

So my personal conclusion: Yes, reading and looking videos will help, but most important is to practice and the understanding that it will need a lot of practice, not just a few knives and then we it´s done. But for me that´s not a problem, as I also recognize it is a quite relaxing type of work.

I sharpen with the stone in my hand, so I can watch the edge and even manipulate the stone to make it easier to hit the edge from heel to tip. I do it with pocket knives and kitchen knives. It works for me, might be something to look into!
