Eze-Sharp or Edge Pro?

Anyone have any experience with the Eze-Sharp
or compared it directly to the Edge Pro?

Looks like the Eze-Sharp will use any 8"X2" or 9"X2" stone.

I searched and there were a few references, but nothing too in depth.

That's an interesting looking rig (EZE Sharp). The reversible clamp would help out on my Edge Pro sometimes when I'm sharpening blades that won't lie flat and tend to rock slightly because of their geometry. It looks like it might give the Edge Pro a run for it's money. At least among the sharpening challenged among us.
 
That's some set up. :) The only thing I'd question is how well it would work on smaller blades. Especially when working around the tip with those big stones. It seems to be more designed for big kitchen knives. Also it would take more time to flip the knife around. I love my EdgePro and find it gets the job done just fine.
 
I'm thinkin' an Edge Pro will be the way to go. Thanks for your input. Actually...the lack of input about the Eze Sharp makes the decision to go with the Edge Pro a no brainer.

I use an Edge pro and love it.
That said, I agree with Panella that the (EZE Sharp)
looks very interesting and if the blade clamp system works,
this could be an advantage.
I too sometimes find blades rocking on the Edge Pro table.

But the service Dale from Edge Pro gives the knife community
is so good that it makes up for any and all very small gripes with the product.
 
yam - You'll never be sorry that you bought an Edge Pro. I have both the APEX and the Pro model. Love 'em both. And what WadeF said seems to be valid about the EZE Sharp. Might be tougher to sharpen small blades on it. A big disadvantage.

A little practice and you'll get superior results with the Edge Pro. Make sure you order the video and an upgrade set of waterstones if you choose the APEX model. It's money well spent. Dale is great to deal with.

As always...you guys ROCK! This place is a wealth of information. My wife has been a working chef for a little over 22 years, a graduate from New England Culinary Institute. The kitchens she has been in...according to her the best sharpening was done with an Edge Pro. Herself and most of the other chefs she has worked with will not allow anyone to use anything other than an Edge Pro on their personal knives. The kitchen knives get whatever treatment is the fastest. Their personal knives get either the Edge Pro or they do it themselves. This is because in this type heavy use environment they get touched up about every month or there abouts. Not so good knife sharpening will quickly ruin a good knife along with the edge not lasting.

Ok....between you guys and my wife it's the Edge Pro. Just been puting it off for waaaaay too long.
