I have a hunting knife that I received from my grandmother. My great grandfather used it for hunting. The knife is in good condition but the blade seems to have a lot of stuff on the surface. No chips, and the handle is good as welll. Anybody have any ideas on how to remove the gunk from the blade?

Depends on the nature of the "gunk". Going to assume you mean actual gunky stuff and not rust. Different materials are soluble in different solvents.

I would go to the paint store and get
Mineral spirits = regular paint thinner
Methyl Ethyl Ketone, if not available then get acetone.

Start with the mineral spirits. If the mineral spirits do not loosen it up, switch to the ketone. Use a fine Scotch-Brite pad to lightly help. Wear gloves and work in a well ventilated area.
