F. Dick Kitchen Knives??

has anyone ever heard of these? does anyone know the specs?
they issue them to us at JWU and i was wondering what they're made of.
they're not too good.
 
There was discussion of various kitchen knives recently in the blade discussion forum. Basically the european type is softer ,easier to sharpen to needs to be sharpened more often. The japanese knives are harder so will hold an edge longer but are more easily sharpened.There's lots of choice out there. I have older and better Henkels but I'm interested in harder steels at this point in life.I was impressed by the laminated KAI/Shun with a laminate of hard center layer covered with damascus . My dream would be a custom S30V. As a chef your basic tool is the knife and the style and material is very important. Look around and try different ones.Keep them very sharp and don't lend them out!!
 
Mete,I make all my professional cutlery from ATS-34.After Cryo hardening it is the max.I,too prefer the japanese grind.Nothing like a 10" santoku for all around use.8" sashimi for slicing.
 
It's hard to beat S30V in the kitchen. After using a set of Henckels Four Star for about 15 years, I was ready for something with fewer faults.

I stumbled across maker Steve Sando and have taken delivery on a set of 4 blades, all S30V. Sando's web site:

After using them a few months, the S30V has met all of my expectations, and then some. It holds the edge really well, and seems to be 'more stainless' than whatever Henckels are made from.

S30V is great, but the design and implementation are important as well. Steve used a different grind on each of the 4 blades, to fit the purpose of each one. For example, the 4" paring knife is hollow ground with a tapered tang, while the 8" carving knife is convex ground with a full distal taper.

I could not be happier... S30V is great in the kitchen!

F. Dick is a Germany brand. F Dick has been a manufacturer of forged knives since 1778. We have received the F.DICK' knives from different clients to ask us to reproduce them by using new brand.
