Factory Edge Angle

There's a bit of variance. It seems like it's somewhere between 21 and 25 degrees per side. I use and Edge Apex and the marker trick to sharpen mine and it varies by knife.
 
I use 40 degrees per side, 80 degrees inclusive. Basically, I like butter knives. ;)
