fallkniven or helle for a hunting knife?

As the title says, I am looking for my first quality hunting knife to be used mainly for dressing deer, and maybe a few ducks but primarily deer.
Looking at the Fallkniven H1 and some helles right now but also considering katesune sp? or mora.
Let me know what you guys think would be good options for me, would like to stay under 100 but willing to spend a little extra for something like the fallkniven ($125).
Also what is the best method of sharpening such a knife? I have a 1000 grit japanese king waterstone now. I would like to get a good quality rod/steel as I really like sharpening on those if anyone has recommendations for a rod that would sharpen and hone...

I can't comment on appropriateness for hunting although I'm sure Fallkniven would excell at such a task since I have the F1 and the A1, but I can tell you how to sharpen one.

I'd stay away from stones on convex knives. All you need is a leather strop and some black and green compound on each side. I've never needed anything more heavy duty - some people use sandpaper on a slightly soft surface like a mousepad. My F1 can whittle hair.

Check out some vids by Virtovice on youtube as he has both fallknivens and a Helle too and uses them mainly for hunting and bushcraft. He also has a heap of vids on sharpening. AND WELCOME TO BFs!

I like Kanetsune.
But for hunting i would bring a Mora since they're so cheap and they're also sterile compared to a carbon steel wood handled knife.

for sharp knife helle and scandy knife are realy semply. for work both are good. i prefer helle i see it realy good for work. roselli is very good
 
Of those two I would go with fallkniven. To be perfectly honest though, neither of those would be on my list as a hunting knife. If you do your own processing then those two would be an even greater pain in the butt.

Also, by your selection I'm assuming you are hunting large critters and not small or medium game.

Does your state allow you to quarter game for removal from the field? Ours does not. You have to transport the animals to the check in station before skinning or otherwise processing them. Either way you'll find a 440C narrow, skinny blade 3 1/2" to 4" perfect for field to freezer. That's is provided you really want to carry a fixed blade while hunting. Most people around here do not. Most use a small 3" folder for field work and used butchering knives to cut the deer up after they get it checked in.

I've found most of the knives labeled as hunting knives today are a real pain in the butt to use for field work.
 
cultivateitnow you have brought up something which I have really been wondering about.
I live in Texas so there is no check in and I can skin and quarter my deer which is what I would like for my knife to be designed to do.

So I guess the more precise question would be, what tools do I need to properly gut and or skin and quarter a deer while in the field?
 
I think that Helle is more useful as a hunting/skinning knife while Fallkniven is more a general purpose knife.

Moras are great, but they are thin & light so you may have to work harder at certain tasks like separating joints. The Kanetsune knives I own are too thick to be good skinning knives.
 
Hey sniper, i realize you have looked at some blades that you like but if you want to check out a few more look at "Knives Of Alaska", they make quality knives and have been very good for my uses, as they are hunting and fishing purposes also. I have purchased 3 of their knives and love them. I really like my Alpha wolf from them... Hope it was a help and just not more decisions...lol:D
 
I'm not a hunter so I can't provide an opinion on "design appropriate" for use as a hunting knife. That will be a matter of personal preference anyway, what one person thinks is the best hunting knife made, another will feel it falls short in some respect.

Fallkniven makes top quality knives, you won't go wrong with Fallkniven in that respect.

As for Helle or Mora I can't really speak from personal experience as I don't own either, but they seem to be well respected by many here on the forums.

The H1 should be a good hunting knife, it is after all designed specifically for thast purpose by a man who is himself an avid hunter. The thermorun handle is molded onto the tang and will provide for easy wash up and sanitation.

The Fallkniven HK9 is another knife designed as a hunter, but it is outside your prefered price range.

As for sharpening, you can use any sharpening method that works for you. I use a belt sander/strop or sandpaper and mousepad/strop, but Fallkniven actually recommends on their site to use a combination diamond / ceramic stone or DC rods for sharpening.

The VG10 Fallkniven uses is an excellent steel with great edge holding capability. The 3G steel is worthy of consideration IMO because it does hold and edge even better, provided it falls within your budget.

PS As previously mentioned by another member, the Kanetsunes I own are very nice knives, but the blades are very thick. They may have some models better suited to hunting, but I'm not familiar with them.
